Monday Mushrooms



When ordering stuff mushrooms from your favorite restaurant, one  typically thinks they are ordering a veggie dish therefore, it must be healthy, right? Well think again. With the whole milk cheese, breadcrumbs, and heavy oil and saturated fat, you're shrooms have now become a high calorie appetizer. 

For dinner I created my favorite appetizer into a dinner. These mini portobello mushrooms are stuffed with avocado, spinach, and kale, topped with sautéed bok choy, spinach, asparagus, and diced fire roasted tomato, and served with an arugula beet salad was transformed into a hearty yet healthy meal.
