Veggied Out Monday

It's Monday, and you may not feel like anything heavy, especially after a splurge and eat what you want kind of weekend. You may just want a taste of fresh veggies. This roasted tomato with  ratatouille, quinoa, shelling pea hummus, olive oil, and aged balsamic vinegar, is by far the best vegged out meal! This dish is very light and the mixture of ingredients is like a party in your mouth.
