What makes it skinny:
- Fish is dipped in buttermilk, dressed with panko breadcrumbs, and seasoned with a pinch of our favorite seasonings. It's not deep fried, but baked in an iron skillet lined with evoo.
- Mac and Cheese is made with whole wheat noodles, Campbell's cream of cheese (1 can has 100 calories), and pinch of mild and sharp cheddar cheeses.
- Mixed greens are prepared with water and one cup of vegetable stock, smoked paprika, garlic, kosher sea salt and pepper.
