Lighter Labor Day

 

Labor Day is typically known for backyard BBQ accompanied with all the fixings. However, sometimes the fixings can be the ultimate nutritional blocker given all the extra calories. Avoid the guilt by paring your favorite burger with veggie stuffed green bell peppers. 

Ingredients: green bell peppers, spinach,onion, mushrooms, carrots, tomatoes (optional), and quinoa



Step 1: After quinoa is boiled, sauté veggies over medium to high heat with extra virgin olive oil. 


Step 2: Stuff bell peppers with quinoa and veggie mixture and place in the oven at 400 degrees for 20 minutes. 



Step 3: Let peppers cool, settle, and enjoy!
