Soul food Wednesday


Today the SFG's are craving soul food, but with half the calories. The meal featured is Croaker fish with Panko bread crumbs.  The sides are mac and cheese and mixed greens (collards, turnips, and rutabagas). 


 


What makes it skinny:
  • Fish is dipped in buttermilk, dressed with panko breadcrumbs, and seasoned with a pinch of our favorite seasonings. It's not deep fried, but baked in an iron skillet lined with evoo. 
  • Mac and Cheese is made with whole wheat noodles, Campbell's cream of cheese (1 can has 100 calories), and pinch of mild and sharp cheddar cheeses.
  • Mixed greens are prepared with water and one cup of vegetable stock, smoked paprika, garlic, kosher sea salt and pepper.
